Me oh my, I love pie!

I follow a GF blog that extended an invitation to make a gluten free pie before 7/5 and post pictures of it.  Looking for any excuse to try a new GF dessert, I joined in.  (Last I heard, there were over 1000 people making pie!)  I hate rolling dough of any kind so I choose the GF pie crusts from Whole Foods for my blueberry ginger pie.  The flavor of the crust was good.  I couldn’t tell it was GF - which is the point.  The filling was great!  Blueberries were so yummy.  My only complaint with the crust is that both crusts were formed into a pie pan.  There wasn’t an option for a top crust.  I ended up using one of them for the top crust anyway which is why this pie won’t win any awards in the beauty category.  Overall, it was delicious!  My boys gobbled it up.
